The Minced Vegan Shrimp with lettuces is one of the most popular traditional Taiwanese dishes, that you may find in many authentic Taiwanese cuisine restaurants.

The freshness of lettuces and many vegetables combine with many layers of flavor of the Mince Vegan Shrimp. It is light, delicious, and healthy. Most important of all it is not difficult to make at all.

| Serving portion: 12 pieces; 4-5 persons | 

| Prepare time: 15 mins; Cook time: 15 mins |

 

Ingredients:

A. Pine nuts (raw) >30g

B. Lettuces >3 pcs (with 10-12 browses)

C. Shiitake mushrooms >5 pcs

 Ginger (remove the peel) >small piece (own preference) 

 Oyster mushroom >1 pc

 Celery >2 sticks

 Redbell Pepper >1/2 pc

 Corn (canned) >150g

 Vegan Shrimp >10 pcs (defrost) 

 White sesame oil >own preference 

D. Crunchy Snack Mini Noodles >1 small pack 

 

Sauce:

Vegan Mushroom Oyster Sauce >2 tbsp

White pepper salt >1 tsp

Curry powder >1 tsp

 

Preparation: 

- Medium heat ingredient A, stir fry for approximately 2mins. Set it aside when it is finished.

- Defrost vegan shrimp 

- Cut all ingredient C in diced form 

- Smash ingredient D in the little pack itself 

 

Cooking Steps:

Shiitake mushroom, stir fry medium-high heat cook approx. 1 min till golden. This is essential to "wake up" the flavoring of the mushroom.

+ ginger, stir fry for 15s. You will smell the ginger when it is ready. 

+ the oyster mushroom, celery, red bell pepper to the stir fry, mixing frequently for approx. 1.5 - 2mins.

+ corn and the vegan shrimp into the mix, and stir fry mixing frequently for 1.5 mins. 

+ finally add in the sauce and mix frequently for approx. 1min. (may also add few drops of white sesame oil at own preference) 

 

Now you are finished with the stir fry. Set aside and stand by. Scoop the Mince Vegan Shrimp onto lettuces. Finally sprinkle pine nuts & crunchy snack mini noodles (alternative: by using smashed Doridos) 

Ready to serve!
